DAILY ACTIVITY (English Version) #24

Hi~ all of you who have read my Blog until this day, today is our last day of practice in this semester, and next week we will prepare ourselves for additional lessons in the final class and final exam.

My friends and I are in the kitchen, we will make a rotation menu II.1, Beef Rice Bowl. Today there are not many activities, we only finish the program today, or the menu that was prepared yesterday. The first thing to do is to take or prepare the material that was prepared yesterday. All prepared materials are stored in one place to make it easier if you want to take them.

Then take the stock pot and fill the water, boil the water and give salt in the blanch water. Add the cauliflower and cook broccoli to soften then lift and soak in ice water so the color is fresh, then blanch the carrots until the soften lifts and soak in water ice to stop the cooking process and maintain the color of the carrot to keep it fresh.

Next is, the meat saute that has been marinated for one night, the meat saute until the meat is soft. After all the meat has been cooked, then prepare the seasoning for the sauces. Prepare chili sauce, sweet soysauce, oyster sauce, chicken powder, black pepper, salt and pepper.

After that, prepare the saute pan for the meat saute. Heat the oil on the saute pan, then add onion, green bell pepper, red bell pepper saute until the fragrant aroma is smelled. Then add the spices to the saucepan in saute pan then taste, after the taste is good, then add the meat.

Cook until all the marinades soak into the meat, cook over low heat so that the marinade soaks well and the meat can cook evenly. After the meat is cooked, remove the meat. Prepare the bowl to be plating and then explored to Mr. Ical. Then place the rice in the insert bowl, carrot, broccoli and cauliflower and the meat into the bowl.

Today's practice has been completed, we clean all the tools that we have used, then we arrange according to the place. Then we do general cleaning together so that the kitchen we use remains clean. After that, we returned to our homes.





BEEF RICE BOWL
INGREDIENTS :
400 gr Beef short ribs (or sirloin, or tenderloin), thinly sliced (*see footnote 1)
2 tbsp Light soy sauce (*see footnote 2)
1 tbsp Japanese sake
1 tbsp Oyster sauce
1 tbsp Miso
1/2 Sugar
1/8 tbsp Black pepper powder
1 tbsp Peanut oil (or vegetable oil)
1/2 Onion, sliced
500 ml Chicken stock
1/2 pcs Brocolli or cauliower,(separated and cut to bite size)
2 pcs Small carrot, sliced Steamed rice


PROCEDURE :
1. To slice beef thinly, place fresh beef in the freezer for 20 minutes, or use half-thawed beef. Slice along the grain into 1/16 inch (2mm) thick pieces (or as thin as possible).
2.Cut and Prep veggies.
3. Combine light soy sauce, Japanese sake, oyster sauce, miso, sugar, and black pepper in a small bowl. Mix well and set aside.
4. Heat peanut oil in a large skillet over medium heat until warm. Add onion. Cook and stir until soft, about 2 minutes.
5. Add chicken stock and the mixed sauce. Cook until bringing to a boil.
6. Spread beef slices in the skillet. Cook until bringing to a gentle simmer and immediately turn to low heat.
7.Simmer uncovered until beef turns tender and the sauce thickens, for 40 to 50 minutes.
8. While simmering the beef, bring a pot of water to a boil. Add broccoli and carrots. Cook until just soft. Drain and set aside.
9. Add rice to serving bowls. Top with broccoli and carrots on one side, and the beef on the other side. Drizzle with the beef sauce. Serve warm.

Heloooww~ all my friends & my Readers. Today I made Ingen no Goma ae, Ingen no Goma ae, which is a food from Japan. The food is quite simple, making it does not require a long time, the first thing to do is prepare the material that was prepared by friends yesterday. Next is the cooking process.

The first step to make Ingen no Goma ae is to cut the beans 3 cm in size, then prepare the sesame seeds to mix into the sauce later. Roast the sesame seeds first, then puree the sesame seeds, mix with sugar and soysauce with the one in the receipe.

After the sesame seeds are mixed with the sauce then the bean blanch uses salt water, cook for about 1-2 minutes. Lift the beans and place them in ice water so that the color of the beans remains fresh. Then mix the crushed sesame seeds and mix with sugar and soysauce.

Mix all ingredients together then stir well evenly, if it is evenly placed on a serving plate. The time for plating food, give the tomato cherry pieces on the plate or according to the creation of kelian and sprinkle again with roasted sesame. Ingen no Goma ae is ready to be presented.

Next we prepare ingredients for tomorrow's menu, the menu for tomorrow is Beef Rice Bowl. The first one prepared is the meat, the meat is cut into dice or dice after that the meat is marinated with spices such as soysauce, oyster sauce, sugar, and blackpepper, let stand for about one night.

RECEIPE :


INGEN NO GOMA AE
INGREDIENTS:
650 gr String bean, cut 3 cm
250 gr Sesame seed, roasted
50 ml Shoyu
40 gr Sugar

PROCEDURE :

#THE LAST EPISODE OF MY CROISSANT TEAM 


Like yesterday, we were given another chance to make croissants ... Actually yesterday's croissants were good but just not perfect. And hopefully this time our croissants will be perfect, as expected by Mr. Faishal and friends, of course :)

We started preparing materials, weighing them with concentration and also making them wholeheartedly ..

We have begun to feel comfortable and also like the way of making croissants.

Unexpectedly, for almost 6 days we made croissants ...

At first we felt pressured but now we have felt the wisdom of all these failures.

We are more understanding and we also know what are the causes of the croissants and tips for making croissant too ...

You could say all of our efforts will pay off at the end of this episode ...

Our mood today is good ... it's one of the keys to making bread too ... I have to KEEP YOUR MOOD hehe don't get angry first ... or it will fail again with the croissant :(

After we prepared all the ingredients, we began to stir the ingredients with dough mixer

Flour already, sugar, yeast too ... then start we put the milk little by little into it ... until the dough starts to mix evenly .. after mixing, we put 1 egg in it .. and stir again with mixing dough ... then the last don't forget to give salt ... don't add salt along with yeast because the two ingredients when mixed will react negatively to each other, which causes the yeast to die and not expand ..

After the mixing process, we put the mixture into the bowl and let it proofing for 1 hour and continued by rolling and putting the mixture in the freezer up to 3 times and we folded it with folds of the single which was also 3x

Our previous mistakes were also due to the folds. we use single and double folds ... which should be for beginners to use 3x singles ... single and double are actually not used to fold it but in the way we make it we have to use the term fast already ... we are beginners so sometimes still confused and also the manufacturing process is long so it would be nice to use a 3x single because it's safer

The dough began to enter the oven ... we were confident that the croisaant would be ready ... But when it opened it turned out to be like yesterday ... the dough pores are not expanding at the bottom ... but dont worry i'm still have other croissants in the oven ... because we made it in 2 doughs

And now I will share the recipe that I used to make special croissants for all of youπŸ’•


Ingredients : 
450 gr milk 
8 gr instant yeast 
30 gr sugar 
15 gr salt 
80 gr butter,soft 
800 gr flour 
450 gr butter 

How to make? 

1. Mix flour, sugar and yeast then pour the milk slowly then mix well until mixed then add butter stir again and the last add salt
2. Don't stir until smooth. if it's finished, place the dough in a bowl and leave it for 1 hour (cover with napkin clean and wet)

3. If it's been 1 hour, take it and do the rolling process, then put the fat croissant in it and fold it with a single fold




4. Then put it in the freezer for 30 minutes

5. Remove and roll again.. you can roll manually or with dough sheeter. But this time I used a dough sheeter. After that fold again with a single fold and put the freezer back for 30 minutes



6. Do it again as before..  rolling then fold with the folds of the single again. So we do 3x the single fold. Put it back in the freezer for 30 minutes

7. Take a croissant from the freezer then roll back for the last.After that measure and shape then fold the croissant.








8. After that, let the croissant proofing back for 2 hours. don't forget to close the croissant with baking paper on top when proofing it ...

9. After 2 hours have passed ... rub the croissant with egg wash on top of it then bake the croissant in the oven for about 20 minutes.

Oh yeah I will write a few tips to make croissants that I got during this study.

1. Weigh all ingredients correctly

2. Don't mix salt and yeast during the mixing process

3. Make sure that you use butter instead of margarine

4. Save the croissant in the freezer instead of the chiller

5. after mixing let the dough proofing first for 1 hour do not immediately rolling and put into the freezer

6. fold using a single with 3x (for beginners)

7. Rolling carefully

8. Don't be rushed, make sure to stay calm and in a good mood

9. You can use a dough sheeter

10. Last proofing for 2 hours

11. When placing croissants in the oven. put it carefully so that the croissant is not shaken and unsteady

12. Don't forget to brush the egg wash when the croissant wants to bake


13. Now this is the important thing, do it sincerely and also with your heart. don't be like an element of coercion or anything else because this is also one of the most important factors that causes this croissant to fail ...

#MY CROISSANT TEAM Episode 3 


Today is not as bad as the previous day ... because we have already begun to understand in making croissants ... we could say yes 60% is it hehe

Tips from me, you must to be calm and avoid negative thinking, worry, and anxiety. just calm down if you want to make the bread ... and don't forget to cook it with your heart guys ... mmm, start loving what you do ... why my croissants always fail in the beginning? because I didn't like making croissants first and at the beginning I was always negative thinking and worry.. 
now i also learn that,actually cooking is the first important thing is...  with a calm heart and don't be quick in making it also the main thing is...  keep calm and don't forget to pray too hehe

As usual in the morning..  I prepare all the ingredients to make croissants ...

Continued by mixing the dough, proofing, then putting croissant fat in it and also resting the dough in the freezer

Everything went smoothly until when we started the rolling process on dough sheeter
And finally we start to bake in the oven ...

30 minutes later the croissant is cooked
waww the results turned out to be better than before ...
We were very happy ... because of our development in making croissants from day to day even betterπŸ‘ŒπŸ‘ŒπŸ‘Œ

We also confidently showed our croissants to Mr. Faishal and when we showed him he said that a few minutes more croissants would be perfect because underneath it had not expanded so that our proofing was not long or it could be when we put it in the oven we did not carefully put it so that there is a shock that causes the bottom to not expand

Pak Faishal finally gave us another chance to make croissants ... we were happy to accept it. because by repeating we can know how to make good and right croissants ..
