Daily Activity (English Version) #2

Today we all continue the yesterday's practice of making various forms of puff pastry
like Turn overs, pinwheels,and napoleon.

I was lucky enough to find this recipe from my campus. Now this was an amazing discovery.  I can make puff pastry and save myself so much time and effort.  Yeah I like that!
This is a pastry that is flaky , crispy and buttery. And another bonus point is, that you can fill it  with any filling that suits your tastes.
Danishes are light, multi-layered pastries that make a sophisticated and delicious  addition to a breakfast spread. One thing that makes them so appealing? All the Danish pastry shapes you can try!
Before we can start making the danish pastry shapes, we have to get the dough ready

  • Gently roll your pastry dough into a lightly floured surface. Cut the pastry into even squares, as all of these shapes are based on a square.
  •  You could also use a ruler to ensure that your proportions are accurate. Once you have your squares, you’re ready to fold!

These are three of my favorite Danish Pastry shapes, The Pinwheel,Turn Overs and Napoleon. Follow along to see how to make all four shapes.

1. THE PINWHEEL
This shape is always a favorit ,often it’s the only one that I’ll make.
1. To make the shape, make four equal cuts at each corner of one square. Each cut should reach toward the center of the square but not cut all the way through.
2. Grab one half of each corner and pull it toward the center of the square. Then, add your filling at the place where all the points meet.
2. TURN OVERS
1. Trim edges and cut into four rectangles. Place puff pastry squares on prepared baking sheet.
2. Lighlty brush edges of pastry with egg wash. Place filling in center of squares. Fold over puff pastry to create a triangle and gently press edges together. Using a fork, press edges to seal. Brush with eggwash and sprinkle tops with cinnamon sugar.

3. NAPOLEON
The Napoleon is a pastry made of many layers of puff pastry with filling alternating the layers. It can be eaten as a desserts. And it is usually filled with whipped cream, pastry cream, and fruit preserves. most often raspberry jam. The topping may be simply powdered sugar, or a strings of chocolate too.
1. Unfold puff pastry sheet and trim edges to a 9-inch square.
2. Cut pastry into nine 3-inch squares.
3. If Using Fruit Jam or Preserves:  Spread about 1 teaspoon of the raspberry or strawberry jam or preserves on each bottom layer. Spread about 1 1/2 tablespoons of the pastry cream over raspberry preserves or if not using a layer of fruit jam or preserves, spread about 1 1/2 tablespoons of the pastry cream on the bottom layer.
4. Spread another 1 1/2 tablespoons of the pastry cream on each middle layer. Finally, top with remaining pastry layers. Spread glaze over top of napoleons, then drizzle with melted chocolate if you want :)
5. Transfer pastry squares to the prepared baking sheets.
Do this before going to the oven!
Use an egg wash
Your pastries may not stick together perfectly, especially if you are working with your dough on a lightly floured surface. Brush the pastry with an egg wash (a egg whisked together with milk) to make the surface sticky and help the pastries hold their shape.
The egg wash will also give the pastries a golden color and provide a nice surface for coarse sanding sugar to stick to, if you want to add some texture to your pastries.
And now,
Preheat oven to 425'F/220'C. Line 2 baking sheets with parchment paper or plain brown paper, set aside.
Bake until pastry is criso and golden about 20 minutes. Let stand for 5 minutes, then transfer to wire rack to cool. Serve warm or at room temperature.
I hope you decide to give this Puff Pastry a go. Let me know what you think and how you filled yours. Enjoy!

Daily Activity (English Version) #1

Hello! My name is Clarissa. It's so very nice to meet you.

Good food is simple, fresh and delicious baking real, good food.

Thankyou for visiting. It is my joy to teach, share and cook with you. :)

Today, we started the practice with Egg dishes and Puff Pastry, its so easy and i think you can do it at home.

And this is my favourite pastry dough. It’s extremely versatile and can be used to make a variety of delicious ‘morning goods’, It’s easy to shape in different ways too. As for croissant dough, well-chilled, good-quality butter is essential. Neatness when folding is also imperative. The rolling and folding technique is the same as the one used for croissants.

PUFF PASTRY
Puff pastry, also known as pâte feuilletée, is a flaky light pastry made from a laminated dough composed of dough (détrempe) and butter or other solid fat (beurrage).

Ingredients :
250 gr hard flour
200 gr fat
175 gr water
3 gr salt

Method :
1. Put the flour into the bowl, Add the salt to one side of the bowl and add the water too. After that add the fat. mix everything but the fat should not be destroyed at all
2. Roll the dough with a thickness of 2 cm, then do a single fold (fold 1).
3. Let stand in the freezer for 15 minutes.
4. Roll the dough with a thickness of 2 cm, then do a single fold (fold 2).
5. Let stand in the freezer for 15 minutes.
6. Roll the dough with a thickness of 2 cm, then do a single fold (fold 3).
7. Your dough now needs to be left in the fridge for 8 hours, or overnight, to rest and rise slightly. It is then ready to use.

And now i want to explain about egg dishes, but before that i want to ask you,

“How do you want your eggs?”
How many times have you been asked that at a restaurant and not known exactly how to answer it? “What’s the way where it’s fried but the yolk is still runny?” “Aren’t sunny side up and turn over the same thing?” “What’s the difference between hard boiled egg, medium boiled egg and soft boiled egg?”
Eggs really tie breakfast together. They’re great in so many ways: inexpensive, easy to prepare, cook quickly, and offer a solid source of protein.
So how do you answer the next time a server asks how you’d like your eggs? Here are 5 ways to cook an egg

1. BOILED EGG
The boiled egg. It’s so simple, which of course makes it so easy
Boiled eggs are eggs typically from a chicken, cooked with their shells unbroken, usually by immersion in boiling water. Hard-boiled eggs are cooked so that the egg white and egg yolk both solidify, Boiled eggs are a popular breakfast food around the world.

What’s the difference between a hard-boiled,medium boiled-egg and soft-boiled egg?
  • Hard-boiled eggs (still good, but don’t add moisture to a dish) have a solid white and a solid yolk that’s light yellow and crumbly. Boil for 7-12minutes.
  • Medium-boiled eggs (my favorite for everything) have a solid white and medium-runny yolk that’s a bright, beautiful yellow. Boil for 5-7 minutes.
  • Soft-boiled eggs (that you crack and eat with a spoon for breakfast) have a soft white and a runny yolk. Boil for 4 minutes.
How to make boiled egg?
Ingredients :
1. 3 eggs
2. water

Method :
  1. Fill a small pot with enough water to cover the eggs.  Bring it to a boil.
  2. Reduce the water to a simmer and gently drop each of the eggs, one at a time, into the water.
  3. Let simmer for hard boiled egg 7-12 minutes, medium boiled egg 5-7 minutes and soft boiled egg 4 minute
  4. Remove the eggs from the simmering water and put them into an ice bath.  Once cooled, peel and serve.

2. POACHED EGG
Poached eggs are a beautiful thing. The whites are just firm enough on the outside to contain an oozy, golden yolk in a round little egg package.
Poached eggs are one of those items I find folks order frequently in restaurants, but they don’t make very often at home. Why? I think most would say that it’s difficult to get that perfect, spherical shape without lots of crazy white wispies.
But poaching is one of the best cooking methods for creating healthy eggs. So today I’ll share with you how to make the perfect poached egg.

Ingredients :
2 eggs
water
vinegar
salt

Method :
1. Boil the water, adding a tablespoon of vinegar. Meanwhile, crack your eggs into a small cup so they're ready to go when the water reaches the right temperature. Eggs poach quickly, so you have to move fast.
2. When the water reaches a boil,Stir the vinegar into the water and create a vortex. Add the egg to the middle of the vortex and cook the egg for 3 minutes.
3. Remove the egg with a slotted spoon and dab it on a paper towel to remove any excess water. Serve immediately.

3. FRIED EGG
 *SUNNY SIDE UP*
Sunny side up eggs have a fully cooked white and a runny yolk. It sounds easy, but making sunny side up eggs can be a tough skill to master. Use this technique and you can make a perfect sunny side up in just about 3 minutes!

How to make Sunny side up?

Ingredients :
2 eggs
1 tablespoon unsalted butter
Seasoning of salt and pepper

Method :
1. Heat butter in a nonstick skillet over medium heat until lightly foaming, tilting pan to evenly distribute the melted butter.
2. Carefully break eggs into the small bowl and drop the egg in the pan.season lightly with salt and pepper. cook until the whites are just set on top and the yolks are still runny, about 3 minutes.
3. Give the ring cutter mold to the egg so as not to widen the egg white and also the lid on the mold of the ring cutter so that it cooks quickly
4. Give a little water in the pan so that the bottom of the egg doesn't burn easily
5. Wait until water runs out and slowly open the lid
6. If it is cooked, transfer to a plate and serve immediately^^

 *TURN OVER*
A Fried egg is a cooked dish made from one or more eggs which are removed from their shells and placed into a pan, usually without breaking the yolk, and fried with minimal accompaniment. Fried eggs are traditionally eaten for breakfast in many countries but may also be served at other times of the day.

How to make?
Ingredients :
2 eggs
2 tablespoon oil
Seasoning of salt and pepper

Method :
1. Coat a non-stick pan with oil, Heat pan over medium heat depending on your stove, Making sure the pan is well-oiled is key to making sure the eggs don’t stick.
2. Crack your eggs into a bowl and drop the egg in the pan. Season lightly with salt and/or pepper.
3. Give the ring cutter mold to the egg so as not to widen the egg white and also the lid on the mold of the ring cutter so that it cooks quickly
4. Give a little water in the pan so that the bottom of the egg doesn't burn easily
5. Wait until water runs out and slowly open the lid then turn the egg
6. If it is cooked, lift it slowly and serve it ^^

4. SCRAMBLED EGG
Like fried eggs, scrambled eggs come in a range of styles. This is the type you're most likely to see in an American diner, with large, fluffy curds. To achieve that, we cook them over medium-high heat and keep the stirring to a minimum. Though these naturally come out a bit drier than other scrambled-egg preparations, pre-salting the eggs keeps them plenty tender.

How to make?

Ingredients :
2 eggs
1/8 teaspoon salt
2 tablespoons milk (optional, more than 2 tablespoons is okay)
1/2 tablespoons unsalted butter
Freshly ground black pepper

Method:
1. In a small bowl, beat eggs with salt
2. In a nonstick skillet, melt butter over medium-high heat until foamy. Add eggs and cook, stirring, until large, fluffy curds form and eggs are fully cooked through, about 3 minutes. Season with pepper and serve.

5. OMELETTE
Omelette is a dish made from beaten eggs fried with butter oil in a frying pan (without stirring as in scrambled egg). It is quite common for the omelette to be folded around a filling such as cheese, chives, vegetables, mushroom, meat (often ham or bacon),or some combination of the above.

How to make Basic Omelette?
Ingredients :
2 eggs
2 tablespoons oil
Seasoning salt and pepper

Method:
1. Crack the eggs into a mixing bowl with a pinch of salt and blackpepper. Beat well with a fork.
2. Heat a oil in a small frying pan on a low heat, when the oil is hot and the oil coats the pan, pour the eggs into the pan.
3.Turn the eggs to one side and if already cooked underneath,
4. Slowly turn the egg and wait until it's all cooked
5. If its done, slide into a plate to serve
